Breadcrumbs are a well-known product, especially in Italy; it is prepared by grinding the bread in various degrees of fineness and is used for breading or gratinating cooked foods. It is also applied as a thickener of sauces or an ingredient for soups and condiments.
The grain size of the grated bread particles determines the optimal use in the preparation of food and recipes. The size of the bread crumbs thus obtained must be as similar as possible, so as to help form a consistent breading when it is applied in the kitchen (normally, never less than 100 µm).
