Quality in the kitchen is combined with circular economy, thanks to the Virto-Cuccolini vibrating sieves, in bakery industry.
Breadcrumbs are a well-known product, especially in Italy; it is prepared by grinding the bread in various degrees of fineness and is used for breading or gratinating cooked foods. It is also applied as a thickener of sauces or an ingredient for soups and condiments.
The grain size of the grated bread particles determines the optimal use in the preparation of food and recipes. The size of the bread crumbs thus obtained must be as similar as possible, so as to help form a consistent breading when it is applied in the kitchen (normally, never less than 100 µm).
This is where the Virto-Cuccolini vibrating screens come into play.
Furthermore it is interesting to consider that the industrial bread coming out of the production line with aesthetic defects can be reused, within a circular economy concept that allows to reduce waste and obtain a new marketable and perfectly edible product: an economic principle to which Virto -Cuccolini is pleased to take part.
